I’m always looking for quick, easy, and hearty breakfast options to make for my family. Especially when it comes to the holidays, this Tater Tot Breakfast Casserole covers pretty much every breakfast staple item. You’ll find that it’s super quick and easy to make and it also freezes well. With only five ingredients, I’m sure that you’ll enjoy this recipe as much as I do!Print
Tater Tot Breakfast Casserole is the perfect casserole for Christmas morning, pot lucks, freezable meals and more. Check out my notes below for a different cheese option.
1lb Breakfast Sausage
1 Dozen Eggs
2 Cups Shredded Cheddar Cheese
1/2 Cup of Milk
32oz Bag of Tater Tots
Cook your breakfast sausage
Whisk your eggs in a large bowl
Add cheese to the whisked eggs
Salt and Pepper to taste
Add drained breakfast sausage
Mix all of the ingredients really well
Place tater tots on top of the mixture neatly. (Do not let tater tots overlap)
Pour mixture into a 9×13 greased baking dish
Bake at 350 degrees for 55-60 minutes or until tater tots are golden brown
Use Turkey Breakfast Sausage for less fat.
For a little more kick, I highly suggest using Pepper Jack Cheese in lieu of cheddar. In the photo above, I also added green onions on top of the tater tots before finishing with more cheese.
Add green onions or tomatoes to the casserole.
