Grilled Summer Salad with Honey Dijon Champagne Vinaigrette

Ah, summer, the season of sun-kissed skin, endless BBQs, and of course, fresh and delicious salads! And if you’re like me, you’re always on the hunt for a salad recipe that’s easy to whip up, but still packs a punch when it comes to flavor.

Enter the Grilled Summer Salad with Honey Dijon Champagne Vinaigrette. Trust me, this salad is a game-changer! The hearty mix of greens and grilled veggies tossed in a tangy-sweet vinaigrette will have your taste buds dancing with glee.

Let’s break it down, shall we? First, you’ll need a large handful of your favorite greens. I’m talking arugula, spinach, kale, or a mix of all three. Next, it’s time to add some texture and sweetness to the mix with slices of juicy cantaloupe, a handful of cherries, and cherry tomatoes.

But wait, there’s more! We’re not done yet. No summer salad is complete without some smoky, grilled goodness, so we’re adding a bunch of perfectly charred asparagus and thinly sliced cucumber to the mix. And to top it off, we’re sprinkling some pine nuts and sliced smoked gouda (um, yum!) on top, along with a few crispy slices of bacon.

Honey Dijon Champagne Vinaigrette

the real MVP of this salad is the Honey Dijon Champagne Vinaigrette. It’s tangy, slightly sweet, and has just the right amount of zing to make your taste buds go wild. Plus, it’s super easy to make! All you need is some Dijon mustard, honey, Champagne, and olive oil. Mix it all together in a jar, give it a good shake, and voila!

Ingredients

Scale

1/4c Dijon Mustard or Spicy Brown Mustard

1/4c Honey

1/4c Extra Virgin Olive Oil

1/3c Your favorite champagne, brut, or bubbly

Pinch of pepper

If you do not want to add the champagne, substitute for another 1/4c Extra Virgin Olive Oil


Instructions

In a medium size bowl, add all ingredients.

Whisk until all ingredients are combined.

Pour over your favorite salad, pasta, or even use it as a dip.

Ingredients

Scale

3 Large handfuls of your favorite greens

2–4  Slices of grilled cantaloupe

1 Handful of cherries

1 Bunch of asparagus about 16 stems

1 Handful of cherry tomatoes

6 Thinly sliced cucumber

1 Handful of pine nuts

Sliced smoked gouda

3–4 Slices of cooked bacon


Instructions

On a large plate, layer ingredients in this order: Greens, Cantaloupe, Smoked Gouda, Cucumber, Cherry Tomatoes, Asparagus, Pine Nuts, and bacon.

Drizzle with desired amount of Honey Dijon Champagne Vinaigrette

Garnish with toasted seed of choice. (I used Sesame)
