There’s nothing like diving into a hearty salad with ingredients that are the epitome of Summer and just topping it off with the perfect dressing. Because let’s be honest, if you have the wrong dressing, it really messes up a salad. In this post, I’m giving you all the details on how assemble a Grilled Summer Salad and how I make my Honey Dijon Champagne Vinaigrette, which I’m convinced should be award winning.

When making this salad, you need to head outside to jump on the grill. If you don’t have an outdoor grill, then an indoor grill pan can assist with giving you grill marks. But let’s be honest that there’s nothing like that grill flavor, so use your grill if you can.
What items do you need to grill for this Grilled Summer Salad
- Thick slices of cantaloupe. Drizzle with olive oil and if you’re in the mood add a little sea salt.
- Asparagus. Cut off the ends, throw in a bowl, toss in olive oil, lemon juice, salt & pepper, then place on the grill until it reaches your desired tenderness.

Honey Dijon Champagne Vinaigrette
The Honey Dijon Champagne Vinaigrette is the glue to this this salad. It is the perfect weight because it dresses each ingredient without feeling too heavy. The best part is that you only need a few ingredients to make this vinaigrette:
- Honey
- Dijon Mustard or Spicy Brown Mustard
- Extra Virgin Olive Oil
- Champagne or Brut

Honey Dijon Champagne Vinaigrette

Ingredients
1/4c Dijon Mustard or Spicy Brown Mustard
1/4c Honey
1/4c Extra Virgin Olive Oil
1/3c Your favorite champagne, brut, or bubbly
Pinch of pepper
If you do not want to add the champagne, substitute for another 1/4c Extra Virgin Olive Oil
Instructions
In a medium size bowl, add all ingredients.
Whisk until all ingredients are combined.
Pour over your favorite salad, pasta, or even use it as a dip.

Grilled Summer Salad with Honey Dijon Champagne Vinaigrette

3 Large handfuls of your favorite greens

1 Handful of cherry tomatoes
6 Thinly sliced cucumber

Sliced smoked gouda
Instructions
On a large plate, layer ingredients in this order: Greens, Cantaloupe, Smoked Gouda, Cucumber, Cherry Tomatoes, Asparagus, Pine Nuts
Drizzle with desired amount of Honey Dijon Champagne Vinaigrette
Garnish with toasted seed of choice. (I used Sesame)
