Basic Buttermilk Sheet Pan Pancakes

Just in time for Christmas Breakfast. If you need to make pancakes for a lot of people, then I totally suggest that you make my Basic Buttermilk Sheet Pan Pancakes. They literally taste like traditional individual pancakes, you can just make these in the oven and you can make enough to serve a lot of people at one time.

What ingredients do you need to make Buttermilk Sheet pan pancakes?

If you’re making Basic Buttermilk Sheet Pan Pancakes from scratch then you only need the following ingredients to add to your grocery list:

  • Buttermilk
  • Eggs
  • Vanilla
  • Butter
  • Flour
  • Sugar
  • Baking Soda
  • Baking Powder
  • Salt
  • Optional Cinnamon
  • Optional Toppings

What toppings can you add to Sheet Pan Pancakes?

When it comes to Basic Buttermilk Sheet Pan Pancakes, the sky is the limit with toppings. Just like you can add whatever you like to traditional pancakes, you can do the same with these. Here is a list of my favorite toppings:

  • Funfetti made with Fruity Pebbles Cereal. (The instructions for these are in the recipe card)\
  • Strawberries and chocolate
  • Peanut Butter and Bananas
  • Blueberries
  • Apple and Cinnamon

Basic Buttermilk Sheet Pan Pancakes

Ingredients

2c Buttermilk

2tsp Vanilla Extract

2 Eggs beaten

2tbs Melted Butter

2 1/4c Flour

2tsp Backing Powder

1tsp Salt

1tsp Baking Soda

1/4 Granulated Sugar

1tsp Cinnamon (Optional)

1c Fruity Pebbles (Optional for Funfetti Pancakes)

1c Toppings of choice


Instructions

Preheat oven to 425 degrees.

Line a large sheet pan with parchment paper and a light oil spray.

In a medium bowl, mix wet ingredients – buttermilk, vanilla, eggs, and melted butter.

In a different medium bowl, mix dry ingredients – flour, baking powder, salt, baking soda, sugar, optional cinnamon.

Pour the wet ingredients into the dry ingredients and mix so that everything is blended. DO NOT OVER MIX.

You will still see lumps.

Mix in Fruity Pebbles at this time if you are making Funfetti Pancakes.

Pour onto a large sheet pan and evenly spread the batter over the pan.

(If you are adding toppings, now is the time to evenly place them on top of the batter)

Bake for 14 minutes or until the center is cooked all the way through. Use a toothpick or fork to carefully check the middle.

Enjoy immediately if possible. If not, you can easily rewarm a slice in your microwave. You can also freeze your portion for later.
