Spicy Pineapple Shrimp Fried Rice

May 4, 2020 Easy Meals, Food + Recipes, Video

When I make my Spicy Pineapple Shrimp Fried Rice, I like to mix the flavor notes. Using Sylvia’s Sizzlin’ Hot Spice gives the recipe a good kick to marry all of the flavors. It gives you the best of all worlds, sweet, salty, and spicy.

How do you make a pineapple boat?

  1. Cut a whole pineapple in half lengthwise.
  2. Starting with one half, cut a large rectangle along the the edge of the pineapple. Try to place your knife at an angle so that it can cut under the flesh as much as possible.
  3. Continue to cut the flesh to create cubes in the flesh.
  4. Scoop out each cube with a spoon.

Ingredients

Scale

1tbs Vegetable Oil

1c Large Shrimp – raw, peeled and deveined

2 Eggs

4c Jasmine Rice

1c / 3Stalks Green Onion (diced)

1tsp Curry Powder

2tsp Sugar

1/4tsp White Pepper

1/4tsp Salt

2tsp Sylvia’s Soulfood Sizzlin’ Hot Spice

1tbs Fish Sauce

2tbs Soy sauce

1c Fresh Pineapple (diced) (use can if you must)

1/2c Unsalted Cashew

Instructions

In a large wok heat vegetable oil over medium high heat.

Once oil is hot, add raw shrimp to the wok.

Cook shrimp until it just turns light pink. Do not overcook.

Remove shrimp from the wok and sit to the side.

Now add eggs to the wok. Let them set for about 1 minute before scrambling.

Begin to scramble eggs.

While eggs are still loose, add jasmine rice to the wok. This will allow for the egg to hold onto the rice much better.

Mix in green onions.

Mix in curry powder, sugar, white pepper, salt, and Sylvia’s Sizzlin’ Hot Spice.

Mix in fish sauce, soy sauce, diced pineapple, unsalted cashews, and cooked shrimp.

Serve immediately in your favorite dish or a hollowed fresh pineapple bowl.

Garnish green onions and a dash of Sylvia’s Sizzlin’ Hot Spice.
