Quick and Easy One pot Cheeseburger Soup

It’s that time of year, when the chilly. weather makes us yearn for a cozy bowl of soup. This Quick and Easy One Pot Cheeseburger Soup is the perfect solution because it only takes 30 minutes to make, and its a good soup to use when you want to freeze your meal prep.

The recipe for my Quick and Easy One pot Cheeseburger Soup is fairly simple and straight to the point. It gives you that rich delicious flavor that will make you feel like you’re eating at your favorite restaurant. However, if you want to make it a little more interesting and a great way to sneak in some veggies, then you can add vegetables to your soup. You can try to add carrots, celery, peas, broccoli, etc, to the pot when you begin to sauté your onions.

Can you freeze Cheeseburger Soup?

Yes, you absolutely can freeze your Cheeseburger Soup. I like to separate it into individual servings. When someone wants a bowl, they can just grab a serving and pop it into the microwave. They’re also perfect to use when meal planning.

What ingredients do you need to make Cheeseburger Soup?

  • Lean Ground Beef
  • Onion
  • Garlic
  • Salt
  • Pepper
  • Beef Bouillon
  • Potatoes
  • Milk
  • Flour
  • Velveeta
  • Cheddar Cheese
  • Water

What toppings can I put on top of my Cheeseburger Soup?

The great thing about this cheesy hearty soup is the fact that it’s fun to add toppings. I truly believe that’s one of the reasons why my kids enjoy this soup so much. They get to add their own toppings and make it just the way they like it. Our usual topping choices are:

  • Shredded cheese
  • Bacon
  • Green Onions
  • Tomatoes
  • Sautéed Mushrooms
  • Diced Pickles
  • Whatever you like on your burger

Tips on how to make the Best Cheeseburger Soup

  • Serve it in a sour dough bread bowl.
  • Be sure to keep an eye on it after you add the milk and flour mixture because it can thicken up really fast. If this happens, add a little water to thin it out.
  • Feel free to add more cheese. You can add an additional 4oz of velveeta or another 1/2 cup of shredded cheddar cheese.
  • Make it a chowder by decreasing the water to 2.5 cups.
  • Loosen up the soup by adding more water. Pour in 1/2 cups at a time.

Ingredients

Scale

2lbs Lean Ground Beef

1 Onion (medium and diced)

2 Garlic Cloves (minced)

2tsp Salt (divided)

2tsp Pepper (divided)

5 Beef Bouillon

2 Potatoes (peeled and cubed)

4c Milk (divided)

2tbs Flour

4oz Velveeta

2c Cheddar Cheese

2c Water


Instructions

In a large pot, brown ground beef. Add 1/2 of your salt and pepper to the beef while cooking.

Drain meat and sit to the side.

In the same pot, add onions, garlic, and potatoes.

Pour in water and bouillon, bring to a boil.

Reduce heat and pour in 1/2 of your milk.

In a separate bowl, mix remain milk and flour and remaining salt and pepper.

Pour into pot and mix well.

Stir in velveeta and cheddar cheese.

Continue until cheese has completely melted.

Serve immediately.
