Easy Sweet Corn, Tomatillo and Chicken Foldable Tacos

If you enjoy eating tacos with the family, but you don’t enjoy the mess that comes along with it. Especially if you have toddlers who are still learning how to get food into their mouths. Fret no longer, because I have the perfect remedy to solve that messy problem. In this post, I am going to show you my game changing recipe for Easy Sweet Corn, Tomatillo, and Chicken Tacos made with CHI CHI’s Foldable Tortillas.

When it comes to CHI-CHI’s FOLDABLES Tortillas, they are the newest star of our kitchen. Mainly because you can stuff them with any of your favorite ingredients, and it doesn’t matter if they are savory or sweet. I swear to you that they are extremely versatile. For instance, one night I made my Easy Sweet Corn, Tomatillo, and Chicken Foldable Tacos. Then the very next morning, my husband Harvey used the leftover tortillas to make us egg and cheese breakfast pockets.

What I love most about CHI-CHI’s FOLDABLE tortillas, is that the kids enjoy eating them. They’re just so easy to hold and you don’t have to worry about anything falling out. My youngest is only 1 year old, so he’s at a stage where he eats constantly and is determined to feed himself. With these, he can feed himself and it gives me confidence that more food will make it to his stomach, rather than the floor.

So, I decided to make a sweet and savory taco recipe that would be perfect to have at your next Cinco de Mayo party, or for any gathering during the upcoming warm Summer months.

Easy Sweet Corn, Tomatillo and Chicken Foldable Tacos

If you enjoy eating tacos with the family, but you don’t enjoy the mess that comes along with it. Especially if you have toddlers who are still learning how to get food into their mouths. Fret no longer because this recipe for Easy Sweet Corn, Tomatillo, and Chicken Tacos made with CHI CHI‘s Foldable Tortillas will save the day!


Ingredients

Scale

8 CHI-CHI’S FOLDABLES® Tortillas

2 Cups of Shredded Rotisserie Chicken

2 Roasted Peppers (sliced)

1c Queso Fresco

1c Pepper Jack Cheese

For Dipping

CHI CHI’s Smoky Chipotle Fiesta Syle Salsa

Plain Greek Yogurt or Sour Cream

Sweet Corn & Tomatillo Filling

16oz Frozen Sweet Corn Kernels

1tbs Butter

2tbs Sugar

3 Tomatillos (diced)


Instructions

Sweet Corn & Tomatillo Filling

In a large skillet, add 1tbs of butter. Bring heat to medium. 

Once butter is melted, add in your tomatillos to sauté

Add your frozen corn to the skillet and give a good stir.

Stir in your t tablespoons of sugar. 

Stir until corn and tomatillos are completely cooked and tender. Sit to the side.

Foldable Taco Assembly

Take one  CHI-CHI’S FOLDABLES® Tortillas

In the center add a small helping of each ingredient in the following order:

  • Rotisserie Chicken
  • Queso Fresco
  • Corn & Tomatillo Filling
  • Roasted Peppers
  • Pepper Jack Cheese

Fold each tab of the tortillas in a clock motion. 

Place on a medium hot skillet with melted butter/oil and cook on both side until the pocket is golden brown and cheese has melted on the inside. 

Dip in CHI-CHI’s Smoky Salsa and plain yogurt or sour cream.

Notes

Use 1/4c of CHI-CHI’S® Fiesta Style Chile Tomatillo Verde as a replacement for tomatillos.

Tips for the perfect CHI CHI’s Foldable Tortilla

  • Don’t be afraid to add a lot of filling.
  • Make sure the last tab of the tortilla, locks under the previous tab and over the first tab. This will ensure a secure pocket.
  • Get creative with your fillings.
  • Use a store bought rotisserie chicken to cut down on cooking time.
