Creamy Watermelon Coconut Smoothie

Creamy Watermelon Coconut Smoothies it THE PERFECT refreshing drink to serve during a warm summers day. It’s a refreshing smoothie that you can literally sip on for hours. The best part is that it takes no time to make.

All that’s needed to make this refreshing Creamy Watermelon Coconut Smoothie is a blender and a few ingredients. First you want to start with nice big frozen watermelon chunks. I typically keep watermelon chunk in the refrigerator so that I can have something to snack on throughout the day. Especially since I’ve been pregnant because my doctor told me that watermelon helps with dehydration. If I know it’s going to be a warm day, I’ll put a bowl in the freezer first thing in the morning because I know that I’ll end up making one of these smoothies later on in the day.

After adding your frozen watermelon to the blender, you want to add your chilled coconut milk. This is where all of your creaminess will come from. You can use light coconut milk if you prefer, but I find that I prefer the creaminess of the regular. The good thing about this smoothie is that the flavor of the coconut milk is light and not overbearing. Which is a huge plus for me, because Harvey isn’t the biggest coconut fan, but the flavor is subtle enough that he can enjoy this smoothie with me. You can also add coconut rum if you would like to make this an alcoholic beverage.

Close your mixer and blend on high until everything is the perfect smoothie consistency for your preference. If your watermelon isn’t too sweet you can add just a little bit of sweetener. I prefer maple syrup, but you can use honey or agave instead.

Immediately pour your Creamy Watermelon Coconut Smoothies into your favorite glass. I like to use short 6oz glasses when entertaining. It gives the perfect amount for your guests to sip on while mingling.

Be sure to garnish your smoothies with a lime wedge and mint leaf. And don’t forget to pair the smoothie with a straw. When using short glasses, I just cut smoothie straws in half and voila, you have a short straw!

Ingredients

3c Frozen Watermelon chunks

13.5oz Coconut Milk (chilled)

4oz Coconut Rum (optional)

Lime wedges for garnish


Instructions

In a large mixer, mix all ingredients.

Serve immediately and garnish glass with a lime wedge.
