This is a quick and easy  breakfast recipe that’s actually quick and easy! Here are two breakfast muffins for those days when you need a quick fix that’s warm and hearty.

 

Egg White Muffins

That’s a mouthful just saying it 🙂 Kids love cheese and Mama wants it easy so it’s a win-win for everyone. Here we go:

 Ingredients

32oz Liquid Egg White

1c Diced Ham

1c Cheddar Cheese

– Add ham and cheese into each muffin cup.

Fill each muffin cup with egg whites 3/4 of a way. You will need room at the top because these will rise.

Bake at 350 degrees for about 20 minutes. (Depending on your oven)

Sausage Pancake Muffins

Ingredients

Complete Pancake Mix

1lb Ground Breakfast Sausage

Club Soda / Seltzer Water

 

-Mix pancake mix according to instructions. Replace water with club soda.

– Cook Sausage

-Evenly distribute sausage into each muffin pan. Then pour batter to fill pan. 

– Bake at 375 degrees for 15-20 minutes. 

Done!

Tips

  •  You can use water in place of club soda but, I use club soda because it makes the muffins more fluffy.
