Dreamsicle Chia Pudding

I seriously don’t know what it is, but every year when Summer arrives, when the days are longer and hotter, Dreamsicle or Creamsicle (whichever you prefer) always seems to come to mind. There’s something about that magical combination of orange and vanilla cream that definitely is a nostalgic flavor for me! Do you agree? Are you with me here?

Since, I’ve jumped on the bandwagon and joined the rest of the world in the greatness of chia pudding, I decided to have fun with some of the flavor combos. One night when I was preparing my chia puddings for the week, I decided to mimic the flavors of my favorite Summer dessert, The Dreamsicle. It’s actually pretty easy. You’re just using a mixture of vanilla almond milk and orange juice for your liquid ingredients. Be sure to add the fresh orange zest to take your flavors to another level. Also, you can use any topping for your pudding, but I highly recommend that you use fresh orange or tangerine slices, accompanied by blueberries. The combination of all of these flavors are truly magical.

Ingredients

Scale
  • 1/4 cup Chia Seeds
  • 3/4 cup Vanilla Coconut Milk
  • 1/4 cup Orange Juice
  • 2 tbs Honey
  • 1 tsp Vanilla or 1 Vanilla Bean
  • 1/4 tsp Orange Zest
  • Various orange slices and blueberries for toppings

Instructions

  1. Pour chia seeds into a bowl
  2. Mix in vanilla almond milk
  3. Pour in orange juice
  4. Add vanilla
  5. Add honey
  6. Mix well
  7. Refrigerate for at least 1 hour (the longer, the firmer it will be)
  8. Top with fresh berries and shredded coconut
