Cinnamon Roll Breakfast Casserole

Cinnamon roll breakfast casserole is a scrumptious and comforting option for your Christmas morning breakfast. It combines all the flavors of a classic cinnamon roll but adds in some delicious ingredients to make it even better! This casserole is incredibly easy to make and can be prepared the night before so that you can enjoy a hot, gooey breakfast on Christmas morning.

This casserole is made with pre-made cinnamon rolls, so you don’t need to spend any time rolling out and cutting dough. Simply layer the casserole dish with cinnamon rolls before adding a creamy mixture of eggs, evaporated milk, and spices. Then you can add optional fillers and bake it in the oven until it’s golden brown.

When served, the creamy filling is warm and gooey while the cinnamon rolls on top are crisp and sweet. The combination of the two flavors is a match made in heaven! The leftovers also make for a yummy snack or treat the next day.

Cinnamon Roll Breakfast Casserole

Ingredients

3 cans of Pre-made Cinnamon Rolls

2 Whole Eggs

14oz Evaporated Milk

1/2tbs Vanilla

1/2tbs Cinnamon

2 Granny Smith Apples, diced (optional)

1/2c Chopped Walnuts (optional)


Instructions

Cut each cinnamon roll slice into 6-8 pieces.

Place each cinnamon roll piece into a 13′ by 9′ casserole dish to make one layer. If you are adding additional toppings, then this is the time to mix them in with the cinnamon roll pieces.  Sit to the side.

In a medium bowl, whisk your eggs, then add the evaporated milk, vanilla, and cinnamon. Continue to whisk until fully combined.

Pour eggs mixture over the cinnamon roll pieces. Make sure each piece has been submerged in the mixture.

Bake for 35-45 minutes, or until golden on top and completely cooked in the middle.

Top with icing that was provided with the cinnamon rolls, and enjoy.
