Basic Buttermilk Sheet Pan Pancakes

Ingredients

  • 2 c Buttermilk
  • 2 tsp Vanilla Extract
  • 2 Eggs beaten
  • 2 tbs Melted Butter
  • 2 1/4 c Flour
  • 2 tsp Backing Powder
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1/4 Granulated Sugar
  • 1 tsp Cinnamon Optional
  • 1 c Fruity Pebbles Optional for Funfetti Pancakes
  • 1 c Toppings of choice

Instructions

  • Preheat oven to 425 degrees.
  • Line a large sheet pan with parchment paper and a light oil spray.
  • In a medium bowl, mix wet ingredients - buttermilk, vanilla, eggs, and melted butter.
  • In a different medium bowl, mix dry ingredients - flour, baking powder, salt, baking soda, sugar, optional cinnamon.
  • Pour the wet ingredients into the dry ingredients and mix so that everything is blended. DO NOT OVER MIX.
  • You will still see lumps.
  • Mix in Fruity Pebbles at this time if you are making Funfetti Pancakes.
  • Pour onto a large sheet pan and evenly spread the batter over the pan.
  • (If you are adding toppings, now is the time to evenly place them on top of the batter)
  • Bake for 14 minutes or until the center is cooked all the way through. Use a toothpick or fork to carefully check the middle.
  • Enjoy immediately if possible. If not, you can easily rewarm a slice in your microwave. You can also freeze your portion for later.
