1lb Ground Italian Sausage
1/2c Bacon, chopped
1 small Onion, diced
1tsp Minced Garlic
3–4 Russet Potatoes, diced
1tso Dried Oregano
1tsp Dried Thyme
64oz Chicken Broth
1c Heavy Cream
In a large pot, over medium heat, begin to cook your Italian sausage and onions.
Once your onions are translucent, stir in your garlic and bacon.
Once sausage is cooked, drain excess oil.
Add your potatoes and seasonings to the pot and mix with your cooked Italian sausage.
Pour chicken stock into the pot, along with heavy cream.
Stir until everything is completely combined.
Bring pot to a simmer for about 20-25 minutes or until potatoes are tender.
Add kale to the pot about 10 minutes before serving.
Garnish each serving with parmesan or cheese of choice.
