Beef and Lentil Meatballs

3lb 80% Lean Beef

2c Cooked Lentils

1/2 Onion (chopped)

3 minced garlic

1 egg

1/2c shredded parmesan

1/2c milk

1/2tbs cumin

1tbs salt

1/2 pepper

1/2c chopped parsley


Mix all ingredients except for ground beef in a large bowl

Once ingredients are well mixed, add in your ground beef and fold in the rest of the ingredients

Mix well without over mixing

Scoop meat mixture and roll into 2 inch balls

In a large skillet with hot oil, brown the outside of each meatball

Be sure not to cook the middle of the meatball

Place browned meatballs into a 400 degree oven for 15-20 minutes, or until fully cooked

Let meatballs rest for about 10 minutes
