Greek Guacamole

Ingredients

  • 1 avocado
  • 8-10 cherry tomatoes diced
  • 1/4 of a cucumber diced
  • 2 tablespoons red onion diced
  • 8-10 Kalamata olives
  • 2-3 tablespoons vegan feta crumbs or regular feta
  • 1 lime juiced
  • Drizzle of extra virgin olive oil
  • 1 tablespoon cilantro or parsley mincedPinch of sea salt, black pepper, and oregano

Instructions

  • Start with the avocado: Make sure your avocado is ripe. Nobody wants to deal with a chunky or underripe avocado. Cut it in half, remove the pit, and scoop the flesh into a bowl.
  • Add the diced veggies: Toss in your diced cherry tomatoes, cucumber, and red onion. These ingredients provide the perfect mix of textures and flavors.
  • Include the olives: Kalamata olives are a must-have in any Greek-inspired dish. Their briny, salty flavor elevates this guacamole.
  • Squeeze the lime: Fresh lime juice adds a bright tang that balances the richness of the avocado.
