Dipped Roast Beef Sandwiches: A Protein-Packed Comfort Food You’ll Love

Ingredients

  • 2-3 lbs Chuck Beef
  • 3 tbs Butter
  • 2 tsp Salt
  • 2 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1 sp Onion Powder
  • 2 packet Beef Onion Soup Mix
  • 2 sprigs of Rosemary
  • 2 sprigs of Thyme
  • 3 c Beef Stock
  • For the Spread
  • 1/2 c Mayonnaise
  • 1 tbs Dijon Mustard
  • 1 tsp Horseradish
  • Salt and Pepper to taste
  • To make the sandwich:
  • French Bread
  • Swiss Cheese
  • Provolone Cheese

Instructions

Step 1: Sear the Beef

  • Turn on your pressure cooker and set it to the “Sauté” function.
  • Add 3 tbsp butter and let it melt.
  • Season the chuck roast with 2 tsp salt, 2 tsp garlic powder, 1 tsp black pepper, and 1 tsp onion powder.
  • Place the chuck roast in the pressure cooker and sear on all sides until it forms a golden-brown crust (about 4-5 minutes per side). This step locks in the flavor.

Step 2: Add Seasonings and Liquid

  • Once the beef is seared, add 2 packets of beef onion soup mix, 2 sprigs of rosemary, and 2 sprigs of thyme.
  • Pour in 3 cups of beef stock, ensuring the beef is mostly submerged.

Step 3: Pressure Cook

  • Close the lid and set the pressure cooker to “High Pressure” for 60 minutes.
  • After cooking, allow the pressure to release naturally for 10-15 minutes, then perform a quick release.

Step 4: Shred the Beef

  • Remove the chuck roast and use two forks to shred it into bite-sized pieces.
  • Return the shredded beef to the pot to keep it warm in the flavorful au jus.

Step 5: Make the Spread

  • In a small bowl, mix 1/2 cup mayonnaise, 1 tbsp Dijon mustard, 1 tsp horseradish, and salt and pepper to taste.
  • Set the spread aside for assembling the sandwiches.

Step 6: Assemble the Sandwiches

  • Slice the French bread in half lengthwise and spread the prepared mayo mixture on both sides.
  • Layer the shredded beef onto the bread.
  • Add slices of Swiss cheese and provolone cheese on top of the beef.
  • Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Step 7: Serve with Au Jus

  • Slice the sandwiches into portions and serve hot with a small bowl of au jus for dipping.
