Spinach and Cheese Stuffed Salmon

Ingredients

6 6-8oz Salmon Filets

1c Cream Cheese, softened

1/2c Feta Crumbles

1/2c  Parmesan Cheese, grated

1c Frozen Spinach

1c Cherry Tomatoes, quartered

1/2tsp Salt

1/2tsp Pepper

1/2tsp Garlic Powder

1/2tsp Onion Powder

1tsp Oregano

1/4c Fresh Parsley, chopped

1c Fresh Crab Meat, optional


Instructions

Pre-heat oven to 350 degrees.

Rinse and pat dry each salmon filet.

Carefully create a “T” shaped slit on the flesh side of each fillet.

Sprinkle seasoning on each salmon filet, on both the flesh and skin side. Sit to the side.

In a large bowl, mix all of the remaining ingredients.

Place fillets skin side down onto an oiled pan or cast iron skillet.

Open each fillet and stuff with filling.

Bake at 350 degrees for 18-22 minutes or until the fish reaches your desired temperature.
