Ingredients
8–10 cups of stale vegan bread (preferably white and wheat)
2 tbs vanilla extract
2 cups almond milk
1 tsp cinnamon
1/2 tsp nutmeg
1 1/4 cup JUST Egg or other egg replacement/alternative
1 cup maple syrup
1 apple, diced (optional)
Maple Bourbon Glaze
1 cup maple syrup
4 tbs vegan butter
1 cup almond milk
1 cup chopped walnuts (optional)
Instructions
In a large bowl mix all ingredients
Cover and let sit for 30 minutes
Pour into a 9×13 baking dish and bake for 20 minutes
While your pudding is baking, start to make your glaze
In a sauce pan melt butter and add walnuts (optional). Turn heat to medium low and while continuously stirring, add almond milk and maple syrup
When the sauce starts to boil, turn off heat
The sauce will be thin
Uncover and top with 1/2 of glaze and bake for another 20 minutes, or until the top is golden
