Summer Beef Toast


Ingredients

Scale
  • Herb Sauce
  • 2 bunches of parsley
  • 1tbs minced garlic
  • 1c olive oil
  • 1 lemon – juiced
  • salt
  • pepper
  • Toast
  • 2c cherry tomatoes
  • 2 medium sirloins – about .5lb each
  • 2tbs butter
  • 45 sprigs of fresh thyme
  • salt
  • pepper
  • herb sauce
  • ciabatta bread
  • 1/2c feta crumbles

Instructions

  1. Herb Sauce
  2. Add all ingredients to a blender or food processor
  3. Blend until it reaches your desired consistency
  4. Add salt and pepper to taste
  5. Toast
  6. Season steak with salt and pepper
  7. In a large hot pan add olive oil
  8. Add seasoned steak to pan for about 2 minutes
  9. Flip the steak
  10. Add butter, thyme, and herb sauce
  11. Cook to desired temperature
  12. Slice into medium sized strips
  13. Add steak to toasted ciabatta bread that has been bathed in herb sauce and olive oil
  14. Top with arugula
  15. Sliced cherry tomatoes that have marinated in the herb sauce for about 30 minutes
  16. Finish with crumbled feta cheese on top
