Golden Beet and Arugula Salad with Fried Apples

1c Diced Roasted Golden Beets

1c Diced Roasted/Fried Apples

2c Arugula

1tbs Gorgonzola Cheese

1/2tbs Chopped Hazelnuts  

1/2tbs Olive Oil

1tbs Balsamic Vinegar 


In a non-stick skillet add about a teaspoon of butter.

Once butter has melted, add your diced apples. Continue to stir them until they get a good sear on them. 

You can add spices and sugar to them for added flavor.

Once the get tender (not mushy) place them to the side to cool.

In a medium bowl, toss arugula with the balsamic and olive oil. You can also add salt and pepper to taste.

Add to the arugula, your roasted beets, fried apples, gorgonzola cheese, and hazelnuts.

Top with a drizzle of more balsamic and olive oil.



For added flavor toast your hazelnuts before adding to the salad
