Create an Easy Super Bowl Vegetarian Dish for Meat Eaters


  • 2 Medium Acorn Squash
  • Olive Oil
  • Kosher Salt
  • Bbq Seasoning/Rub
  • 2 Cups Black Beans
  • 2 Cups Corn Kernels
  • 2 Cups Pulled BBQ Chicken (optional)


  1. Acorn Squash
  2. Carefully slice two acorn squash in half
  3. Clean out seeds from the center of the squash
  4. Drizzle olive oil on top
  5. Sprinkle salt and Bbq seasoning/rub on top
  6. Cook in a 400 degree oven for 45-60 minutes
  7. Flesh of acorn squash should be tender
  8. Add desired amount of black beans, corn, and optional pulled bbq chicken to the inside of the squash.
  9. Drizzle with bbq sauce and siracha ranch
